Summer Berry Parfait

A tasty and healthy breakfast or dessert

This simple parfait is made by layering fresh berries, yogurt, and crunchy granola, then finishing with a drizzle of honey. A tasty and healthy breakfast or dessert option.

What you'll need:

  • 2 large onions, thinly sliced 
  • 1 tbsp olive oil 
  • 1 tsp brown sugar 
  • 1 sheet ready-rolled puff pastry 
  • 50g goat’s cheese or cheddar (optional) 
  • Fresh thyme 

Method:

  1. Cook onions in olive oil on low heat until soft (about 20 mins). 
  2. Add sugar and cook another 5 mins until golden and sticky. 
  3. Cut pastry into squares, score a border, and top with onions and cheese. 
  4. Bake at 200°C for 15–20 mins until golden. 
  5. Garnish with thyme and serve warm.
