Vegan Bolognese
Vegan dinner sorted!
What you'll need:
1 x tin SPAR chickpeas
1 x tin SPAR chopped tomatoes
2 x celery sticks (cut into chunks)
½ x red pepper
½ x green pepper
½ x yellow pepper
1 x onion (diced into small chunks)
¾ x pack of mushrooms (diced)
4 x garlic cloves (peeled)
1 x tsp salt
3 x tbsp mixed herbs
Parsley to garnish
1 x tbsp SPAR olive oil
2 servings of spaghetti
Method:
- Chop the pepper into large chunks
- In a blender, add your tin of chopped tomatoes, peeled garlic, salt and herbs
- Blend for 30-40 seconds and leave to one side
- In a pan, add your oil and once heated, fry the mushrooms for 1-2 minutes and add the celery
- Once soft, add your onions and chickpeas
- After 2 minutes of frying, add your blended sauce and leave to simmer for 15-20 mins
- Serve with spaghetti and garnish with parsley if you wish
