You can elevate your Waldorf salad by adding in cooked chicken or turkey for a tasty & healthy lunch!

What you'll need:

  • 6 tablespoons light mayonnaise
  • 1 tablespoon lemon juice
  • 2 sweet apples, cored and chopped
  • 150g seedless red grapes, halved
  • 4 sticks celery, sliced
  • 50g walnuts, roughly chopped
  • Lettuce leaves
  • Salt & pepper to taste

Method:

  1. In a bowl, mix together the mayonnaise, lemon juice & season with salt & pepper
  2. Stir in the apple, celery & grapes until they are well coated
  3. Sprinkle walnuts over the top & serve on a bed of lettuce leaves
