What you'll need:

  • 2 oranges, peeled and sliced into rounds 
  • 1 small fennel bulb, thinly sliced 
  • Handful of rocket or mixed leaves 
  • 1 tbsp olive oil 
  • 1 tsp white wine vinegar 
  • Salt & pepper 

Method:

  1. Arrange orange slices and fennel on a plate. 
  2. Add rocket, drizzle with olive oil and vinegar. 
  3. Season with salt and pepper. 
  4. Serve chilled as a light starter or side.
