
This simple stew is a perfect way to get 2 of your 5 a day and it is easy and quick to prepare putting less hassle into dinner time.
• 1 The Greengrocer’s onion, diced
• 2 cloves The Greengrocer’s garlic, crushed
• 1/2 tbsp smoked paprika
• 1/2 tbsp cumin
• 1/2 tbsp chilli powder
• 400g chopped tomatoes
• 400g chickpeas
• A handful of The Greengrocer’s fresh coriander, chopped for garnish
1. Add a splash of oil to a large pan on a medium heat
2. Add the onion, garlic and spices and cook for 5 minutes
3. Add the chopped tomatoes and chickpeas and bring to the boil. Reduce and simmer for 10 minutes
5. Serve in bowls, season with salt and pepper and garnish with fresh coriander
