Method
- Cut any larger pieces of mixed fruit until all are roughly around the same size. Place all dried fruit into a large bowl and pour over the brandy. Top Tip: If brandy isn’t the Christmas drink for you, whisky works just as well.
- Add grated zest of the orange to the fruit and then pour the orange juice. Mix together well and set aside in the refrigerator overnight covered by cling film.
- The next morning, using the extra butter, grease two pudding tins. Set aside.
- Using a large bowl, mix the butter and sugar until the mixture is pale in colour. Next, whisk in the beaten eggs gradually. Top Tip: Want to save some time? Try using an electric whisk.
- Next, add in the soaked fruit and juices. Stir for 1 minute and then add in the flour and breadcrumbs. Stir again, then add the spices for flavour. Continue to stir until the mixture is a dropping consistency.
- Pour the mixture into designated pudding tins and cover with foil. Next, with a steamer, steam the puddings for around 4 hrs.
- Once steamed, turn each pudding upside on a wire rack and leave to cool. Your homemade Christmas puddings are now ready to flare up and serve.
