Why not make a fresh and colourful Greek salad to serve alongside a BBQ this summer. Its really easy to make and only takes 15 minutes!

What you'll need:

-1 cucumber roughly chopped

-4 vine tomatoes

-16 olives (A mixture of green and black both work well)

-1 tsp of dried oregano

-85g feta cheese in rough chunks

-1/2 a red onion, thinly sliced

-4 tbsp of extra virgin olive oil

Method:

Step 1: Roughly chop your cucumber and vine tomatoes, thinly slice your red onion and slice your olives into halves. Place into a bowl and add your chopped feta, oregano and your olive oil.

Step 2: Simple stir all the ingredients together, so there is a good coating of the oregano and the olive oil and then lightly season with salt and pepper.

Step 3: Serve in a salad bowl and either eat on its own or serve alongside a summer BBQ with some crusty bread! Simply delicious.
