
You can do a spot of baking even if you have no flour or eggs. Try out this #SPARSubstitute recipe for some delicious cookies!
1 large mashed ripe banana
2 tsp baking powder
4 tbsp maple syrup, honey or agave syrup
2 tsp vanilla extract
250g Smooth Nut butter
100g chocolate, broken up into squares or choc chips
30g black and/or white sesame seeds
2 tbso cocoa powder (optional)
A pinch of sea salt
1.Preheat the oven to fan 170°C/gas mark, line a large baking tray with reusable baking paper.
2.In a large mixing bowl mash the banana then mix in the baking powder, maple syrup and vanilla extract.
3.Add the nut butter and use a wooden spoon to mix together until very well combined.
4.Roughly chop the chocolate (if not using chips) and fold through the batter along with the sesame seeds. Save a tbsp of sesame seeds for sprinkling at the end and add the cocoa if using.
5.Measure out 16 balls of the cookie batter, roughly 1 tablespoon each, then sprinkle the last sesame seeds on each one, and a tiny sprinkle of sea salt if you like and bake for 10–15 minutes on the lined baking tray (making sure to leave room between each one) until the cookies are just set.
6.Remove from the oven and allow to cool on a wire rack before serving.
