This super tasty summer salad recipe makes the most of fresh ingredients, a perfect lunch option that is ready to enjoy in just 10 minutes.
-1 cucumber roughly chopped
-4 cherry tomatoes
-1 chopped peppers
- 2 slices of Denny ham
-1/2 a red onion, thinly sliced
-Washed iceberg lettuce
-Sliced mozzarella buffalo cheese
-Handful of pine nuts-4 tbsp of extra virgin olive oil
Step 1: Roughly chop your cucumber and cherry tomatoes, thinly slice your red onion and pepper. Place into a bowl and add your sliced mozzarella cheese, lettuce and your olive oil.
Step 2: Simple stir all the ingredients together, so there is a good coating of the the olive oil and then lightly season with salt and pepper and top with pine nuts.
Step 3: Serve in a salad bowl and either eat on its own or serve alongside a summer BBQ with some crusty bread! Simply delicious.
