
FOR THE POACHED APPLES
• 4 The Greengrocer’s Golden Delicious apples, peeled and cored
• 300ml port
• 125g brown sugar
• 100ml fresh orange juice
• 1/2 The Greengrocer’s lemon, cut into chunks
• 1/2 The Greengrocer’s orange, cut into chunks
• 2 Cinnamon sticks
• 1/2 tsp vanilla extract
• 250ml water
FOR THE HONEY YOGURT
• 250ml natural yogurt
• 2 tbsp honey
• 1/2 tsp vanilla extract
• 1 tbsp SPAR pistachio nuts, chopped, for the garnish
1. Place all the ingredients for the poached apples, with the exclusion of the apples, into a small pot and bring to the boil. Once boiling point has been reached, add the apples and simmer on a medium heat for 30 minutes
2. Once the apples are soft remove from the pot and place to one side. Strain the leftover liquid through a fine sieve and return to the pot on a medium heat. Reduce the liquid, stirring occasionally, until it becomes a thick sticky sauce
3. Mix the honey yogurt ingredients together. Place a large dollop in the centre of 4 bowls, place the warm apple on top and pour over the sauce and sprinkle with the chopped pistachios
