What you'll need
• 6 tbsp SPAR balsamic vinegar
• 2 tsp dried Italian herbs
• 8 SPAR enjoy local chicken drumsticks or thighs
• 60ml olive oil
• 60ml lemon juice
• 1/2 tsp garlic powder
• 125g The Greengrocer’s fine beans
• 125g The Greengrocer’s carrots, peeled and chopped
• 150g The Greengrocer’s cherry tomatoes
Method
1. For the marinade, whisk together the balsamic vinegar and 1 tsp of Italian herbs. Pour over the chicken and leave in the fridge to marinate for 2 hours
2. Heat the oven to 200°C / 180°C Fan/ Gas 6
3. For the dressing, mix the olive oil, lemon juice, garlic powder and remaining 1 tsp of Italian herbs together and season with salt
and pepper
4. Place the beans, carrots and cherry tomatoes into a large roasting dish, pour over the dressing and add the marinated chicken
5. Cook for 30 minutes or until the chicken is cooked through
6. Serve hot straight from the oven
