Smoky Carrot Dip

What you'll need
• 1kg The Greengrocer’s carrots, peeled and diced
• 300ml olive oil
• 1 tsp paprika
• 200g tin SPAR chickpeas, drained
• 200g SPAR almonds
• 3 The Greengrocer’s garlic cloves, crushed
• Juice of 1/2 The Greengrocer’s lemon
Method
1. Heat the oven to 200°C / 180°C Fan/ Gas 6
2. Toss the carrots in olive oil and paprika, season with salt and pepper and wrap in a tin foil parcel. Place on a baking tray and bake for 1 hour
3. Transfer the carrots into a food processor with the remaining ingredients and blend until smooth
