Steak and Sweet Potato Wedges

A quick and special way to enjoy the ultimate steak
What you'll need
- 500g steak
- 2 large sweet potatoes
- Olive oil
- Tomatoes
- 50g Lettuce
- Salt
- Pepper
Method
- Boil sweet potatoes in salted water for 4 mins, drain and pour over 2 tsp of olive oil & season with a little black pepper.
- Heat oven to 200C and cook sweet potatoes for 15 minutes, then turn & cook for a further 10 minutes or until crisp & golden.
- Rub olive oil all over steaks & season with 1 tsp black pepper. Add steaks to a hot pan and cook for 2 minutes each side or until done to your liking.
- Mix the lettuce leaves & tomatoes in a bowl. Divide the steaks,
wedges & salad between two plates.
