Veggie Rice Bowls

Our delicious Mexican-style veggie rice bowls are the perfect mid-week meal, Quick, easy and packed full of veg, you can't go wrong with our veggie rice bowls.

What you'll need:

150g rice

chopped iceberg lettuce

1 pepper

1 onion

1 pot of guacamole (or scoop of homemade!)  

A handful of cherry tomatoes

1 tin of sweetcorn

1 tin of kidney beans

1 lime 

Sprinkle of garlic powder & paprika 

Small handful coriander

Method:

1. Chop the pepper & a third of the onion into fine slices and bring to a frying pan. Season with salt, pepper, garlic powder and a sprinkle of paprika. Saute until soft.

2. To make the salsa, finely chop the cherry tomatoes and the remainder of the onion. Mix together with chopped coriander and season with salt & lime juice

3. Add the sweetcorn and kidney beans to a pan and heat until warm

4. Add all the ingredients into a bowl & enjoy!
