Watermelon, Olive and Feta Salad

A delicious and refreshing salad that is perfect for those summer lunches in the great outdoors.
What you'll need
- 1 The Greengrocer’s red onion
- 2 The Greengrocer’s limes, juiced
- 500g sweet, ripe watermelon
- 80g SPAR feta cheese
- Handful of The Greengrocer’s fresh mint
- 40g olives of your choice
Method
- Peel and halve the red onion, cut into very fine half-moons and place in a bowl
- Add the juice from the limes and leave for 30 minutes
- Remove the rind and seeds from the watermelon and cut it into cubes
- Cut the feta into cubes
- Combine the watermelon, feta and onion
- Add the chopped mint, olives and toss the salad gently
- Season to taste
